1. Sautee onions, celery, red pepper and garlic in oil until soft. Add seasoning and sausage. Add tomato sauce and kidney beans. Simmer for a little bit. Simmer 'til warm.
2. Serve over cooked rice.
2. I often eat this without the rice, but with noodles or just with a salad.
3. I don't do enough of this type of cooking to know if there is a difference between Cajun seasoning and Creole seasoning, but I found Creole, so that's what I use.
4. The original used spicy sausage links, but I subbed out lower fat turkey smoked sausage instead.
