Tater Tot Casserole

MAKES: 8 servings (The picture is a half recipe - 4 servings only!)
CRISPY RATING: The tater tots get nice and crispy and the mix is tasty!!

Ingredients
  • 23 oz Ore-Ida Tater Tots
  • 2 can canned condensed cream of mushroom / chicken soup
  • 4 oz low-fat cheddar or colby cheese
  • 1 pound Morningstar Farms Frozen Burger Style Recipe Crumbles
  • 1 onion, chopped
  • Green beans, mixed veggies, your choice

1. Preheat oven to 350. Sautee onions in pan sprayed with Pam. Add veggies, then veggie crumbles. Stir until heated through. Mix onion mixture with soups (don't add water.)

2. Spray 9x13 pan with Pam. Place onion mixture in bottom of pan. Put cheese over the mix. Layer tater tots on top.

3. Bake 30 to 45 minutes until tater tots are golden brown and mixture is bubbly hot.

Here are two other variations:

  • 72 onion flavored tater tots
  • 1 lb. extra lean ground beef
  • 1 chopped onion
  • 1 can lowfat cream of chicken soup
  • 1 can regular cr. of mushroom soup or cream of potato
  • 3/4 c. kraft 2% finely shredded cheddar cheese
12 servings at 6 points each
  • 1 pound of lean ground sirloin
  • 1 can of french style green beans
  • 2 cans of FF cream of chicken soup
  • 1 cup of shredded light mozzerella
  • 23 ounces tator tots


MY NOTES AND THOUGHTS:

The number of tater tots seems odd, as it is about 80% of a bag. But, they cover the pan perfectly.

The two variations are from various folks on the Weight Watchers web site, and I adapted the main one from those two.
